Twice Baked Potatoes

Twice Baked Potatoes

Take your potatoes wrap in foil and bake at 350 for one hour.
Once out of oven allow to cool for a bit.
Split in half & carefully scoop out middle
add sour cream, cheese, butter and bacon

Option: you can either scoop back into shells and freeze or scoop into freezer bags and freeze, I have found there are 3 table spoons per potato half (reg size potatoes)

If you don't scoop back in to potato skin:
Take skins cut in half
Freeze:
When ready to use thaw and Place potatoes skins on a greased baking sheet. Combine oil,  cheese, salt, garlic powder, paprika and pepper; brush over both sides of skins. Bake at 475 degrees F for 7 minutes; turn. Bake until crisp, about 7 minutes more. Sprinkle bacon and cheddar cheese inside skins. Bake 2 minutes longer or until the cheese is melted. Top with sour cream and onions. Serve immediately.
